Lent means "to hold fast to," and before the Reformation in the 1500th century, it was a period of abstaining from certain foods and pleasures in order to sharpen one's preparation and concentration for the Easter holiday. Lent lasted for 40 days before Easter Eve (Sundays not included in Lent) - on Ash Wednesday.

The most important food rules were that one should not eat meat and pork, and otherwise be as quiet as possible. Weddings were also not allowed during this period, and married couples were not supposed to "be together."

Fat Tuesday was a festive day where it was important to eat as much fatty food as possible before the long Lent. Menu examples include rasp cakes (Sunnfjord), rømmegrøt (Nordfjord), salted meat (Trøndelag) and a club filled with pieces of pork (Nannestad).
